As summer starts to wind down, we’re getting excited for cozy fall nights around the wood stove. In preparation for the cooler season, we’re sharing some of our favorite recipes. They’re quick and easy, made with pantry staples, and are perfect for busy school and work nights or more relaxed days at the cabin. These are favorites at the Keim cabin, and we hope they’ll become your favorites too! Enjoy!
Chocolate Chip Lemon Muffins (adapted from 300 Best Chocolate Recipes by Julie Hasson)
2 cups flour
1 cup granulated sugar
2 tsp. baking soda
½ tsp. salt
2 eggs
¾ cup milk
½ cup butter, melted
¼ cup lemon juice
1 cup chocolate chips
Combine flour, sugar, baking soda, and salt. In a separate bowl, whisk together eggs, milk, butter, and lemon juice. Gently stir in flour mixture, ⅓ at a time. Fold in chocolate chips. Variation: fold in one cup fresh or frozen mixed berries along with the chocolate chips. Spoon into muffin tin and bake for 20-25 minutes at 375℉.
Irish Soda Bread (adapted from a recipe shared with me by a friend’s grandmother. Thank you, Mrs. Neary-Kennedy!)
2 cups flour
1 ½ tsp. baking powder
¾ tsp. baking soda
1 tsp. salt
3 tbsp. sugar
1 ½ tsp. caraway seeds
3 tbsp. shortening (i.e. Crisco or real lard)
⅔ cup raisins
1 cup whole milk + 1 tbsp. vinegar (or 1 cup buttermilk)
Put all ingredients in a bowl, and using your hands, two forks, or a pastry cutter, combine the ingredients. Form into a circular loaf shape and place in a cast iron pan. Dough will be a bit sticky. Bake at 350℉ for 30-40 minutes, or until golden brown. Remove from the oven and melt butter on top. Allow to cool. Even if you’re not usually a raisin fan, you’ll love them in this recipe, trust me!
One-Skillet Noodles
1 pound of ground beef
1 jar of your favorite red pasta sauce + 1 jar of water
1 tsp. salt
1 tsp. Italian seasoning
2 cups uncooked pasta (like bow-tie or rotini)
1 cup shredded mozzarella cheese
Brown ground beef, add seasonings, spaghetti sauce, jar of water, and pasta. Bring to a boil. Cover and simmer for 15-20 minutes, until pasta is cooked. Sprinkle with cheese, cover to melt. It’s super filling and the leftovers keep well.
Dawndi’s Tournament Cookies (adapted from the recipe featured on the Pillsbury Funfetti cake mix box)
1 box cake mix
⅓ cup vegetable oil
2 eggs
1 cup white chocolate chips
Combine cake mix, vegetable oil, and eggs. Fold in chocolate chips. Bake at 375℉ for 6-8 minutes. This recipe couldn’t be easier, and if you’ve ever been lucky enough to be at any event that Dawndi has brought these cookies to, you know they don’t last long! They're the perfect quick dessert, and can be easily adjusted to your preferences and what you have on hand.
